Yes you will have better take off with the -1 up front and you will have even more take off with +2 in the back. Keep in mind, going -1 up front is like going +3 in the rear just to give you an idea.

The smaller up front, more take off with less top end. The bigger up front less take off with more top end.

Opposite for the rear. The bigger you go in the rear, the more take off with less top end. The smaller you go the less take off and and more top end.

Depends on what year. I think 04 and up use a 17 tooth up front and 03 down use a 16. But I'm not 100%. Somebody will chime in that knows. 07 up definelty uses 17 tooth just not to certain about the older ones.

Always go to http://www.gearingcommander.com and look it up You can play with the gearing there too and see what difference it makes. If trying to determine top speed (theoretical or otherwise) make sure to change the RPM in the green custom section to your rev limiter (13750).

Yep, stock/120 will still work but she'll be at the front of the swingarm/adjusters. You can do 122 to have the wheelbase longer (the wheel will be around .65" farther back).

Best never to count links. Just get the chain a bit longer then you know you'll need and then install the new sprockets, put the rear wheel where you want it (normally closest to the front of the bike), wrap the new chain around, and then physically see where to cut the chain while remember you need chain slack as well.
