I have had this scenario happen four times now and I have been able to pin down a near exact condition so I thought I would post it here to see if I am the only one.
On my bike, going into and coming out of a left turn at a rather high rate of speed four times now I have had the oil light come on. The first time I noticed it I was about to shut it down but the light went out before I could reach for the kill switch. The second, third, and fourth times I just got off the throttle and after a few seconds it cleared itself. During these times I listened to the engine and hear no discernible changes in sound.
I'm going to go to the dealer next week to see if they can think of anything. Because the scenarios it happens in are quite "unique" it's not something that is going to pop up on a routine test ride. Heck, even if a tech was skilled enough to try to replicate them they would have to travel a ways to do it safely.
I checked the oil and it is at the standard half mark on the oil sight glass. I was thinking of going to add a bit more oil but if my initial hypothesis is true (the oil pump starving itself) I don't think a little more will help much (and I don't want to run with it too far over the recommended oil level and cause other problems).
Anyone who hits the canyons or track hard ever run into this problem? Anyone with in-depth knowledge of the new '09 engine can shed some light on potential problems or ways to diagnose it?
Addition: Just talked to a friend who also got an '09 R1 and he's having the same issue.

I haven't had it happen, but I'm probably not hitting it as hard as you.
Isn't there something in the owner's manual that states it may momentarily come on under some conditions (i.e. cornering hard, accelerating hard, braking hard)?

From the manual ...
Even if the oil level is sufficient the warning light may flicker when riding on a slope or during sudden acceleration or deceleration but this is not a malfunction
I've had it happen several times but like you it goes out so I haven't worried to much about it and just accept it as stated :dunno

Most bikes have an oil pressure switch. The 09 R1 has an oil level switch, so if you're cranking it over enough it might flicker like the manual states.

OK, I looked through the manual again and I did see the note (overlooked it the first time). Seems odd that it happens in some instances and not others.
Thanks for pointing me in the right direction.

seems odd that they have a level switch instead of a pressure switch

I was running her close to redline for a prolonged time and had the oil light come on. I let off the throttle and the light went out. I got back up near redline and the light came back on. I let off again the light went back off. My mechanic told me to fill up the oil glass (I was already above the top line). I put enough oil in to just fill the oil glass, took her back out and held it open with no problem.

I've had the same problem. My theory was that at prolonged high rpm you nearly dry out the sum and this causes the light to come on. if it had a oil pressure switch it would not happen. And if you had a sudden loss of oil pressure you could expect the check engine light to come on. when i ride hard and the oil light comes on i try not think about it.

I: actually had this happen for the first time today - going down the highway at a pretty good clip - never saw it before. when it came on the temp was only 176 and my RPM was at about 13k? didn't think I was pushing it TOO hard..... oil level looks ok - eased off for a few minutes and then just rode "normal" and didn't see it again. I was pretty scared at first, but I guess it's just from hard riding?
