I've gotten quite close with the art of 2nd gear clutch up wheelies but I have a problem of slamming the front down at 140++ km/h everytime I close the throttle.

Even a slight closing of throttle causes the front to come down real fast

while wheelieing...
just ride the gas out at a slightly less steady throttle position.
the speed will eventually catch up with the gas your giving and which will then start slowly lowering the front wheel w/o the slam.

Just a little more throttle control at those speeds. Just release in smaller increments.
