Its only a safety, it (all wiring from switch housing) should be able to be disconnected at the harness connection. Bike probably won't be able to start in gear though, if I'm thinking correctly.
Who stalls? :dunnoIf you do jump the clutch switch, just remember it will start in gear.And more importantly make sure everyone else that touches your R1 knows it ahead of time (mechanic, pit crew, tire guy, etc...). You do want it jumped though, otherwise you have to get the bike into neutral to restart it. No fun if you are on the starting grid, stop sign, etc. and stall.
