What is the oem head gasket size?
How much smaller can i safely go down to with 98 octane pump gas?
How are versah head gaskets? Is there any other brands that could be vouched for?

What is wrong with your stock head gasket, and why would you want to increase an already-high compression ratio? Unless you're racing, you may run into pinging and detonation issues.

I am racing. And all pinging and det issues can be solved with good tuning and cam degreeing.

Cam degree won't help with detonation from too much compression and yes you can tune to help not detonate but if your over compression you will just end up pulling timing to the point the bike is losing power over just doing it right. Vera makes one that will take it to 14.0 that would be fine for 93 octane look at superbike unlimited

I've been led to believe that compression ratios are relatively low in this case. You could probably go to a slightly thinner head gasket, but the danger of detonation comes in to play when the motor gets too hot.

I had my head shaved .022" and the tuner believed I could have gotten away with pump 91 if I was careful to not overheat it. Where I'm racing I wanted a bit more power and opted for the race fuel tune, and gave me some overhead on the detonation issues.
