Could you build a cafe racer out of a 2008 250cc Vstar?

If a Yamaha Virago could go from this:

Then could I do something similar with a 2008 250cc V-star? One of the car shops I do business with at work offered me one for a reasonable price and I was wondering if I could cafe it and give it to my wife as a starter bike. Actually the price was low enough that I'm wondering if I could trade something for it. I have a nice set of truck wheels and tires that I may offer.

Never seen it done but there's always a first. Price better be really sweet though.

If it were me, I would just leave it as is and have her start on it that way. Get comfortable, see if she is even really into riding before you put any money into it.

I've wanted to build a cafe for a while, this could just be a fun project. But I dunno, maybe too much work.
